Ingredients
1lb lean ground turkey, or other ground lean meat
2 (16 oz) cans beans, with liquid. Pinto beans, black beans, kidney beans all work
1 (11 oz) can whole kernal corn, with liquid 2 (15 oz) cans diced fire-roasted tomatoes, with liquid or 1 (28oz) can diced tomatoes 1 (11 oz) can tomatoes with chilis, with liquid
1 (4oz) can diced green chile peppers (mild)
1 (1.25 oz) package Taco seasoning mix 1 (1.25 oz) package Ranch dressing mix (or 2T fresh dill if on a sodium restricted diet) Optional for serving:
Avocado, crumbled cheese, sliced jalapenos, shredded lettuce, sour cream or chopped green onions
Cooking Instructions
Brown the ground turkey in a skillet until cooked through and no longer pink. Place all the ingredients (cooked turkey, beans, corn, tomatoes, chili peppers and seasoning packets) into the slow cooker. Stir until mixed Cook on high for 4 hours or low for 6-8 hours
How To Serve
Serve this taco soup hot, topped with fresh ingredients like diced avocado, chopped cilantro, sliced jalapeños, green onions, and a squeeze of lime. Notes
For sodium restricted diets, choose salt-free canned goods, and switch out the ranch dressing packet for 2-3 tablespoons of chopped fresh dill
One can of beans may be swapped out for a can of lentils which breaks down when cooked and will thicken the liquid.
